I’ve always wanted to try making a cake completely without a recipe and this was my first attempt. It came out wonderfully, although a little dense. Had a great almost carmalized top to it that had a touch of crunch and a wonderful coconut flavor throughout. I would probably double the baking powder just to give it a little more rise so it was less of a snacking cake and more of a layer cake. I have big plans for what to do with this cake in the future!
